I can’t even begin to tell you what a challenge it is to pack a lunch for work every day. Because I hate to spend the money on eating out AND I really don’t like fast food, I’ve recently found myself eating very clean (like Whole30 clean) and sometimes it can be a challenge to figure out what to eat if I don’t have leftovers from the night before.

A great go to for me lately has been a bowl with loads of veggies (mixed super greens, shredded carrots, sliced mixed cabbage (trader joes)), topped with avocado, olive tapenade from trader joes, persian cucumbers, chicken skewers (pre-cooked from Costco), drizzle of olive oil, 1/2 meyers lemon and a handful of sprouted mixed seeds (sunflower seeds and pumpkin seeds). I throw it together in under 5 minutes and it’s a very filling lunch.

Or you can try something different and have it still be a satisfying meal in under 5 minutes. This is a great way to get all those delicious veggies in AND healthy fats. This will help keep you full longer and help with your energy levels.

My all time favorite is:
The Vegan Buddha Bowl
Ingredients:
6 TBSP hemp seeds
1/2 c kale
1/2 c shredded carrots
1/2 c shredded purple cabbage
1/2 c avocado, diced
1/4 c diced roasted sweet potatoes
1/4 c hummus
1 TBSP olive oil
Sea salt and pepper to taste
