Hi all! It’s Day 2 of the Whole30 AIP that I’ve been adhering to. I am feeling pretty good. Still a little bloated from my “free for all” days. Granted, those choices were pretty clean, but not nearly as good as they could have been and my body is paying for it.

I spent all day Monday meal planning, shopping and prepping. Basically getting myself set up for success. I’ve found that whenever you take on an endeavor like this, preparation is key. So, make the meal plan, buy the groceries and prep your little heart out. And then, make sure to eat what you’ve prepared! Here are 2 days worth of delicious meals that I have been eating and maybe giving you some hope in knowing that this can be done.

Day 1:

  • Breakfast: Breakfast sausage chicken popper:  These are delicious. I used ground turkey instead of ground chicken. Super yummy and easy to make.
  • Lunch: Ground Beef Stir Fry:  I used green cabbage, zucchini, shredded carrots and broccoli. Once again, very yummy and super easy.
  • Dinner:  Spinach Avocado Turkey Burgers (**note on this: MAKE the avocado mayo! You will not regret it!) and Sweet Potato Fries: OMG! yes!! I used chicken instead of turkey; I used the recommendation of grinding up my own chicken from chicken breasts and thighs. I will be incorporating these into my repertoire.

Day 2:

  • Breakfast: Breakfast Sausage Chicken Popper: I was in a real rush this morning so meal prep was a bonus. Set yourself up for success.
  • Lunch: Spinach Avocado Turkey Burgers with Sweet Potato Fries with the Avocado Mayo. The flavor really developed in these overnight. It was such a delightful lunch. And once again, I made these the day before. Just tossed it in a bag and took it to work. Easy Peasy.
  • Dinner: Turmeric Chicken Curry with Cauliflower Rice:  This was delish. I really enjoyed the deep flavors. I hope you will too.

You’ll notice that I got these recipes from another fantastic site. Unbound Wellness. I stumbled upon her site after searching for some great and easy recipes for what I really needed. I needed Whole30 AIP recipes and these are really great.  I really didn’t want to reinvent the wheel here. Whenever you take on an “overhaul” of your health, preparation is key.
